I came across this fun shortcut for icing cupcakes in the September issue of Real Simple magazine. This is a great no-icing needed method. When there is about three minutes left for your cupcakes to bake, pull them out of the oven and put one marshmallow on the top of each one. Return them to the oven for the remaining time or until the marshmallow is slightly melted but still fluffy.
I love this quick fix when you don't have time to make your own frosting!
